At the end of August – beginning of September 2025, a significant drop in vegetable prices is anticipated in the Ukrainian market, particularly for the so-called borscht vegetables. The reason for the price decrease is the increase in vegetable harvest by approximately 800 thousand tons compared to last year. A large quantity of produce from open fields is currently arriving at trading points, which is already starting to affect price dynamics.

Which Vegetables Will See the Biggest Price Drop
According to farmers’ forecasts, the prices for beets, carrots, cabbage, onions, and potatoes are expected to fall the most. These vegetables make up the traditional borscht set. Their prices are expected to be at their lowest during the mass harvest, which will occur at the end of August – beginning of September.
“We expect the peak of the decrease at the end of August – beginning of September, when there will be a mass harvest of vegetable crops,” explained Denis Marchuk, Deputy Head of the All-Ukrainian Agrarian Council.
Fruits Will Remain Expensive Due to Crop Losses
In contrast to vegetable products, prices for fruits, particularly apples and pears, will not show significant decreases. This is due to spring frosts that caused considerable damage to orchards, resulting in lower-than-expected yields of fruit crops. In 2025, there were few stone fruits, and they remained expensive. Experts do not recommend expecting prices similar to previous years, as even with an increase in supply, the decrease will be minimal.
This is especially true for apples – even at the height of the season, their prices will remain relatively high due to limited supply. Unlike vegetables, which can be quickly grown on large areas and volumes can be increased promptly, fruit cultivation requires more time. Additionally, trees damaged by frosts are unable to produce yields comparable to previous years. This is why the vegetable market will see a noticeable price drop, while the fruit segment will remain more stable in pricing.
