In March 2025, the price of borscht in Ukraine reached 177 hryvnias, which is 19% more than in the same period last year, and also 9% more compared to February. This is evidenced by a study from the Ukrainian Club of Agrarian Business.

Ingredients and Their Prices
To prepare borscht with 3 liters of water, the following ingredients are needed:
- 250 g of cabbage – 12.6 UAH
- 300 g of beets – 8.1 UAH
- 300 g of potatoes – 9.69 UAH
- 200 g of carrots – 9.47 UAH
- 150 g of onions – 2.47 UAH
- 140 g of tomato paste – 35.08 UAH
- 30 ml of oil – 2.73 UAH
- 500 g of pork ribs – 97.35 UAH
Additionally, salt, pepper, and bay leaves should be added to the borscht to taste. If two slices of bread (50 g), a tablespoon of sour cream (25 g), and a clove of garlic (5 g) are added to the dish, the price will rise to 185 hryvnias, whereas a month ago it was 170 UAH.
Price Changes for Ingredients
According to UCAH, the following price changes for the main ingredients of borscht occurred over the year:
- Cabbage: +71% over the year, -1% over the month
- Beets: +51% over the year, +13% over the month
- Potatoes: +26% over the year, -2% over the month
- Carrots: +271% over the year, +9.8% over the month
- Onions: -1% over the year, +5% over the month
- Tomato paste: +14% over the year, +6% over the month
- Oil: +38% over the year, +4% over the month
- Pork ribs: +7% over the year, +10% over the month
It is also worth noting that in February 2025, wholesale prices for industrial products increased by 37% compared to February last year. Prices in the domestic market rose by 40%, while outside Ukraine they increased by 15.9%. The production of food products, beverages, and tobacco products also showed a price increase of 20.2%, specifically within Ukraine by 18%, and outside by 29.1%.
