Changes in the Cost of Borscht Ingredients: Cucumbers Become Cheaper, Beets Become More Expensive

Last week in Ukraine, fluctuations in the prices of borscht ingredients were observed, linked to the abnormally warm weather that contributed to an increase in the supply of local cucumbers. This allowed their price to decrease, but other vegetables, particularly beets, became more expensive.

According to an analysis by analysts from the EastFruit project, beet prices have risen by 20-25%, leading to the vegetable being sold at prices twice as high compared to last year. The wholesale prices for beets ranged from 20-30 hryvnias per kilogram, while the week before they were 16-25 hryvnias.

Price Increases for Other Vegetables

In addition to beets, the price of onions also increased, rising from 14-16 UAH/kg to 15-20 UAH/kg. There was also a price increase for carrots: from 27-30 UAH/kg to 30-40 UAH/kg. Changes were also noted for white cabbage, which became more expensive both for last year’s and early varieties – from 44-45 UAH/kg to 45-55 UAH/kg and from 40-60 UAH/kg to 50-80 UAH/kg, respectively.

Prices for Fruits and Greens

Meanwhile, the warm weather contributed to the rapid ripening of local cucumbers, and their price decreased from 90-160 UAH/kg to 80-100 UAH/kg. The cost of garlic rose from 100-150 UAH/kg to 130-170 UAH/kg, while green onions increased in price from 130-160 UAH/kg to 160-200 UAH/kg.

Fruits also experienced changes: the price of bananas increased from 70-75 UAH/kg to 74-78 UAH/kg, and apples became more expensive from 25-40 UAH/kg to 30-43 UAH/kg. At the same time, the price of pears decreased from 110-120 UAH/kg to 65-100 UAH/kg.
